Samhain Pumpkin Soup

For this pumpkin soup you’ll need:
For approx. 2 people:
- about 4 hand-ful pumpkin cut into small pieces (e.g. Hokkaido)
- 1 onion
- 1-2 small potatoes
- 3/4 cup of cream
- about 2 hand-ful fresh grated Parmesan cheese
- wine
- nutmeg
- lemon
- salt
- pepper
Cut the onions, pumpkin and peeled potatoes in small pieces.
Then roast the onions in olive oil for a very short time. Add the potatoes and pumpkin and stir (the vegetables must not become brown). Then add water so that the vegetables are covered well.
Cook it until the vegetables are soft boiled. Puree it.
Add a bit of wine, cream and the grated Parmesan.
Flavour with salt, pepper, nutmeg and lemon juice and serve it with the whipped cream, eventually a bit of pumpkin oil and roasted pumpkin seeds.
